Recipe, serves 4
Ingredients;
250g The Nuffin Man’s mixed lentil risini
2 x tbsp extra-virgin olive oil
Garlic and herb boursin (I used half the box)
4-6 sun dried tomatoes, chopped
1 x garlic clove, minced
1/4 tsp dried basil
1/4 tsp dried thyme
1/4 tsp dried oregano
1/4 tsp chilli flakes
500ml chicken or vegetable broth (I used one stock cube)
2-3 handfuls of fresh spinach
Salt n peps to taste
Parmesan, grated (optional)
Method;
• In a large pan, add your extra-virgin olive oil on a medium to high heat
• Add all of your herbs, spices, garlic and sun-dried tomatoes and fry off for 1-2 mins
• Add your risini and stir in for few minutes
• Reduce to a low to medium heat and pour in your broth gradually, continuously stirring
• Once you have poured in all of your broth, stir in your spinach
• Check the texture, if not soft enough add more boiling water until at the right texture for you (I had to add around 75ml more)
• Once how you like it serve in your favourite dish with a heaped tbsp of garlic and herb Boursin on top
• Garnish with parsley and Parmesan if you wish
