Ingredients;
75g per person of The Nuffin Man’s sorghum fusilli
2 x tbsp olive oil
1/2 yellow onion, diced
1 x lemon, zest and juice
1 x tbsp capers
1 x tin of sardines, drained and chopped
Fresh parsley to garnish
Parmesan (optional)
Method;
• Bring a pot of salted water to boil and add you sorghum fusilli. Cook for suggested time and reserve a little pasta water
• Add your olive oil to a medium sized pan on a medium to high heat
• When oil is heated, add your diced onion with some salt n pepper – cook for 3/4 mins
• Add in the zest of 1 lemon, juice of 1 lemon, capers and sardines
• Stir occasionally for 5 mins
• Add your cooked sorghum fusilli to the pan with a little of your pasta water
• Serve on your favourite crockery with a generous pinch of parsley and some Parmesan if you fancy
