Ingredients;
75-100g per person of The Nuffin man corn and rice rigatoni
2 x tbsp olive oil
1 x large leek, diced
1/2 white onion, diced
2 x garlic cloves
2 x tbsp nutritional yeast
Zest and juice of lemon
Salt n pepper
Method;
• Heat your olive oil in a large pan over medium-low heat
• Once hot, add the leeks and onion. Season with salt, and let them cook for about 15 to 2o minutes, mixing every so often until they’ve softened
• Add in the minced garlic and cook stirring it into the leeks making sure it doesn’t burn
• While the leeks sauté, bring a large pot of salted water to boil and add in your corn and rice rigatoni
• Once your pasta is cooked, drain and reserve a little pasta water and add it to the leek mixture
• Mix in the zest and juice of half a lemon (or more, if desired)
• Stir in your nutritional yeast
• Serve dnd garnish with some chives or parsley if you would like and enjoy 🙂
