Spicy harissa casarecce

Recipe serves 3-4

Ingredients⬇️

250g The Nuffin Man yellow lentil casarecce
2 x tbsp olive oil
1 x onion, diced (I used red)
4 x garlic cloves, minced
3 x tbsp tomato paste
2 x tbsp harissa paste
200ml double cream
100g parmesan, grated
Salt n peps to taste
Basil to garnish

Method⬇️

• Add olive oil to large pot and heat to medium temperature
• Add diced onion, stir for 4-5 mins
• Add minced garlic, tomato paste, harissa paste and half a tsp of salt n peps, stir in for another 2-3 mins
• Lower the heat and stir in the double cream
• Bring a pot of salted water to boil and add your The Nuffin Man pasta, I used yellow lentil casarecce – boil for 5 minutes
• Whilst pasta is cooking, add grated Parmesan to your harissa sauce and stir in until melted
• Once the pasta has boiled drain, add 4-5 tbsp on the salted pasta water to your sauce to loosen
• Combine pasta and sauce over low heat
• Garnish with basil
