Arrabiata Casarecce

Arrabiata Casarecce recipe for 2 people.

Ingredients:

  • 2 garlic cloves, peeled and crushed
  • 2 tablespoons olive oil
  • 1 red chilli, deseeded and finely chopped
  • 1 can 400g crushed tomatoes
  • 200g yellow lentil casarecce

Instructions:

  1. Cook the Pasta:
    • Bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve a bit of pasta cooking water before draining.
  2. Make the Arrabbiata Sauce:
    • In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant but not browned.
    • Pour in the crushed tomatoes and red chilli. Stir to combine.
  3. Simmer the Sauce:
    • Allow the sauce to simmer over low heat for about 15-20 minutes, allowing the sauce to thicken slightly. You can also blend the sauce for a smoother sauce. Season with salt and black pepper to taste.
  4. Combine Pasta and Sauce:
    • Add the drained pasta to the skillet with the Arrabbiata sauce. Toss well to coat the pasta evenly. If the sauce seems too thick, you can add a bit of the reserved pasta cooking water.
  5. Finish and Garnish:
    • Garnish with fresh basil or parsley if desired.
  6. Serve:
    • Plate up and, if desired, top with grated Parmesan cheese.
