
Arrabiata Casarecce recipe for 2 people.
Ingredients:
- 2 garlic cloves, peeled and crushed
- 2 tablespoons olive oil
- 1 red chilli, deseeded and finely chopped
- 1 can 400g crushed tomatoes
- 200g yellow lentil casarecce
Instructions:
- Cook the Pasta:
- Bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve a bit of pasta cooking water before draining.
- Make the Arrabbiata Sauce:
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant but not browned.
- Pour in the crushed tomatoes and red chilli. Stir to combine.
- Simmer the Sauce:
- Allow the sauce to simmer over low heat for about 15-20 minutes, allowing the sauce to thicken slightly. You can also blend the sauce for a smoother sauce. Season with salt and black pepper to taste.
- Combine Pasta and Sauce:
- Add the drained pasta to the skillet with the Arrabbiata sauce. Toss well to coat the pasta evenly. If the sauce seems too thick, you can add a bit of the reserved pasta cooking water.
- Finish and Garnish:
- Garnish with fresh basil or parsley if desired.
- Serve:
- Plate up and, if desired, top with grated Parmesan cheese.
