Ingredients:
- 200g Buckwheat Tagliatelle or your favourite Nuffin Man pasta
- 1 tablespoon olive oil
- 1/2 onion, finely chopped
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 2 cloves garlic, minced
- 200g ground beef or vegetarian version
- 1 can 400g crushed tomatoes
- 1/2 cup red wine (optional)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and black pepper to taste
- Grated Parmesan cheese for serving (optional)
- Fresh basil or parsley for garnish (optional)
Instructions:
- Cook the Pasta:
- Bring a pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve a bit of pasta cooking water before draining.
- Make the Bolognese Sauce:
- In a large skillet, heat olive oil over medium heat. Add chopped onion, carrot, and celery. Sauté until vegetables are softened.
- Add minced garlic and cook for an additional minute.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Add Tomatoes and Wine:
- Pour in crushed tomatoes and red wine (if using). Stir to combine.
- Season and Simmer:
- Add dried oregano, dried basil, salt, and black pepper to the skillet. Reduce the heat and let the sauce simmer for about 20-30 minutes, allowing the flavors to meld. If it gets too thick, you can add a bit of the reserved pasta cooking water.
- Combine Pasta and Sauce:
- Add the drained pasta to the skillet with the Bolognese sauce. Toss well to coat the pasta evenly.
- Finish and Garnish:
- If desired, garnish with grated Parmesan cheese and fresh basil or parsley.
